Seafood Alfredo Pasta with Cod, Shrimp, and Scallops

Here's what you'll need to make this filling Seafood Alfredo Pasta:

3 fillets of raw boneless cod (frozen or fresh)
12 raw, peeled shrimp (frozen or fresh)
6 raw scallops (frozen or fresh)
1/2 cup butter
1/2 cup Italian dressing
1 tablespoon parlsey
1 teaspoon lemon juice
1 tablespoon Italian seasoning
1 can of alfredo sauce
1 box of fettucine noodles (or penne noodles)
Salt and pepper, to taste.
Parmesan cheese, to taste.

In a large pot, bring water to a boil. Cook noodles. Drain and set aside.

In a large saucepan, melt butter over high heat. Add cod and lemon juice. Let cook for 1 or 2 minutes, while breaking the cod up into smaller pieces.

Next, add the shrimp, scallops, Italian seasoning, and parsley. Cook for approx. 5 minutes or until seafood is fully cooked. Add salt and pepper to taste.

Reduce the heat to medium, and add 1 can alfredo sauce and 1/2 cup Italian dressing. Let simmer, uncovered for 3 or 4 minutes.

Pour over noodles. Sprinkle the top of the pasta with parmesan cheese.

If you want a more spicy pasta, add crushed red pepper flakes to the top of the pasta.

Serves 4 people. Goes great with garlic bread!

Grilled Cajun Catfish Recipe

If you love catfish as much as I do, then you'll love this cajun catfish recipe. Here's what you'll need to make this spicy dish:

4 catfish fillets (about 2 pounds each)
1/2 cup melted butter
1 teaspoon lemon pepper
1 teaspoon white pepper
1 teaspoon creole seasoning
1 teaspoon cajun fish seasoning (or just plain cajun)
2 tablespoons lemon juice
8 lemon wedges
Tartar sauce

In a small mixing bowl, combine the lemon pepper, white pepper, creole, and cajun.

Coat each catfish fillet with a thin coating of lemon juice and melted butter, and then roll the fillets in the mixing bowl with all the spices.

Cook on a 350 degree grill for 5 minutes. Flip and cook for another 5 minutes.

Serve with lemon wedges and tartar sauce. Spicy!

Eggdrop and Rice Soup

Here's an extremely simple soup recipe I came up with one day. Here's what you'll need to create this hearty soup:

1 can chicken broth
1/3 cup water
3 eggs
1 cup white rice (cooked)
1 tablespoon black pepper
1/2 tablespoon salt
1/2 tablespoon garlic salt

In a pot, bring the can of chicken broth and 1/3 cup of water to a boil.

Add the cooked white rice, black pepper, salt, and garlic salt. Let boil for an additional 1 or 2 minutes.

Next, crack the eggs and drop them into the soup, one at a time, making sure to stir frequently. Reduce the heat to medium and let simmer for 2-3 more minutes.

If you want your soup more spicy, just add more black pepper.

Serve.

Delicious Baked Scallops Recipe

Here's what you'll need to cook up this delicious Scallop recipe:

2 lbs fresh bay scallops (or frozen if fresh are not available)
3/4 cup butter
1 white onion (diced)
1 teaspoon fresh garlic
1/2 teaspoon parsley
1/2 cup sherry wine
1/4 cup Italian seasoned breadcrumbs
Salt and black pepper to taste.

In a saucepan, melt butter over medium heat. Add onions, garlic, salt, pepper and parsley. Cook for 5 minutes or until onions are soft.

Add sherry, reduce heat to low, and let simmer for 10 minutes.

Place scallops in a shallow baking dish. (Note: if you're using frozen scallops make sure they are properly thawed before placing them in the baking dish).

Pour cooked mixture (from the saucepan) over the scallops.

Spinkle Italian breadcrumbs over the top.

Bake uncovered at 400 degrees for about 25 minutes.

Serve hot. Enjoy.

Quick Crab Legs Recipe (with lemon and butter)

A lot of people are probably unsure how to cook crab legs, but it's a lot easier than you'd think. All you need is some boiling water, and a few other basic ingredients. Here's what you'll need to cook up some basic crab legs:

2 lbs frozen snow crab legs
1 cup drawn/melted butter
1 tablespoon lemon juice
1 whole lemon (wedged)

In a large pot, bring 5 cups of water and 1 tablespoon of lemon juice to a boil.

Drop the frozen crab legs in and cook for 5 minutes. Do not overcook or the meat will become tough and chewy.

To eat the crab legs, simply crack the legs open and pull the meat out.

Serve with melted butter and lemon wedges.

Simple Meatloaf Recipe

Here's what you'll need to make this simple Meatloaf:

2 lb. meatloaf mix (beef)
1 cup tomatoes (canned)
1 cup seasoned bread crumbs
1 cup milk
2 eggs (beaten)
2 tsp. salt
1 tsp. sugar
1 tsp. baking powder
1/4 tsp. nutmeg
1/2 cup of finely chopped white onions (diced)
1/2 cup celery (diced)
1/2 cup green pepper (diced)

Preheat oven to 350 degrees.

In large bowl, mix all the ingredients together.

Shape the mixture into a meatloaf pan.

Cook for 90 minutes.

Serve hot.

Oregano and Garlic Meatballs

Here's what you'll need to make these mouth-watering meatballs:

3 pounds ground beef
5 tablespoons ground oregano
5 tablespoons parsley (crushed, dried)
1 clove garlic (chopped)
1 package dry onion soup mix (1 oz.)
2 cups Italian style dry bread crumbs

Preheat oven to 350 degrees. Coat a large pan with non-stick cooking spray.

In a large bowl, mix ground beef, oregano, parsley, and garlic. Add the onion soup mix and bread crumbs. Make sure everything is mixed together well.

Using a 1 oz. scoop, scoop and shape the meat mixture into balls. Place the balls onto the pan and cook for 1 hour (or until meat is fully cooked).
