Chicken Cordon Bleu

Here's what you'll need to make this delicious French cuisine classic:

4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
8 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs

Preheat oven to 350 degrees. Coat 7x11 baking dish with a cooking spray (non-stick).

Flatten/pound chicken breasts to 1/4 inch thickness.

Coat each piece of chicken with a light dusting of some salt and pepper. Put 1 slice of swiss cheese and 1 slice of ham on top of each flattened breast. Roll them up.

Sprinkle the rolled-up chicken with bread crumbs.

Bake for 30 to 35 minutes or until chicken is done. Remove from the oven, and place another piece of swiss cheese on top of each piece. Put back in the oven for 2 minutes to melt the cheese.

Serve hot. Delicious!

RattleSnake Pasta

Here's an easy-to-make dish my friends absolutely love. They ask me to make it for them every time they come over for dinner. Here's what you'll need to make this unique, spicy pasta:

3 cooked, diced chicken breasts (bonless, skinless)
1 can Alfredo sauce
1 cup Frank's Red Hot sauce
1 box penne noodles
1/4 cup butter
1 cup of sliced black olives
1/2 green pepper (diced)
1/2 white onion (diced)
1/4 tomato (diced)
1 cup shredded cheddar cheese
1 cup shredded parmesan cheese
Salt and pepper to taste.

Bake chicken breasts for 40 minutes at 350 degrees (or until done). Dice the chicken and then set aside.

Cook the noodles and then set aside.

In a saucepan over medium heat, add the alfredo sauce, Frank's red hot sauce, and 1/4 cup butter (add more butter to make it less spicy). When the sauce starts to heat up, add the green pepper, onion, tomato, olives, and chicken (cooked).

Let simmer over medium heat for 3 minutes. Throw in the parmesan and cheddar cheese and allow to cook for another minute or until the cheese is slightly melted.

Pour over the noodles and serve.

This is a very unique dish you'll really enjoy if you give it a try. :)

Beef or Chicken Quesadillas

Here's what you'll need to make these simple chicken/beef Quesadillas:

Chicken (cooked, diced) OR Ground Beef (cooked)
2 large flour tortillas
1 cup shredded mexican cheese
1 cup shredded lettuce
1/2 green pepper (diced)
1/2 red pepper (diced)
1/4 white onion (diced)
1/2 tablespoon Taco seasoning

In a saucepan, add cooking oil, onions, red pepper, and green pepper. Add taco seasoning. Add the chicken or beef. Sautee over medium heat for 5 minutes.

In another large saucepan, place one of the tortillas over low heat for 1 minute.

Sprinkle the cheese onto the torilla. Add the sauteed vegetables and meat (from the other pan) onto the tortilla.

When the cheese begins to melt, place the other tortilla on top. Flip and cook until the cheese is fully melted.

Cut into quarters. Serve with shredded lettuce, sour cream, and salsa.

Blackened Chicken with Vegetables

Here's what you'll need to cook this low carb, spicy dish:

4 cooked, diced chicken breasts (boneless, skinless)
2 tablespoons cajun seasoning
1 whole green pepper (diced)
1 whole white onion (diced)
1 lb fresh broccoli
1/2 cup cooking oil
1 tablespoon of black pepper

In a saucepan over high heat, add 1/2 cup cooking oil, cooked chicken, and vegetables. Add the cajun and black pepper. Cook for 4 minutes over high heat or until the vegetables are soft.

If you're not counting carbs, serve over a bed of white rice. Otherwise, stay away from the white rice as it is loaded with carbs.

Serve hot.

Chicken with Bacon and Feta Cheese

Here's what you'll need to make this unique low carb Chicken recipe:

4 chicken breasts (bonless, skinless)
8 slices raw bacon
1 cup crumbled Feta cheese

Preheat your oven to 375 degrees. Place raw chicken breasts in a baking pan. Sprinkle the top of each chicken breast with the Feta cheese.

Wrap 2 slices of bacon around each chicken breast.

Bake for 40 minutes or until chicken is fully cooked. Delicious!

Chicken with Parmesan

Here's a low carb Parmesan Chicken dish that is absolutely delicious. Here's what you'll need to make this incredibly simply recipe:


4 skinless, boneless chicken breasts
1/2 cup cooking oil
Parmesan Cheese (finely grated)


In a saucepan over high heat, add cooking oil. After the oil gets hot, place chicken breasts in the pan. Sprinke with parmesan cheese. Allow the chicken to cook all the way through (no pink). Make sure to flip the chicken breasts over so that both sides evenly cook.

The parmesan cheese will create a nice "crust" around the chicken.

Enjoy.

Simple Chicken Soup Recipe

Here's what you'll need to make this healthy chicken soup:

1 tablespoon of olive oil
3 carrots (diced)
2 medium white onions (diced)
2 celery sticks (diced)
10 cups canned chicken broth
1-3/4 teaspoons of salt
1/4 teaspoon of thyme
3 cups chicken (diced, cooked)
2 cups cooked egg noodles

Using medium heat, add cooking oil to a large pot. After the oil is hot, add carrots, onions and celery and cook for 5 minutes.

Next, add the chicken broth, salt, and thyme. Bring this to a boil.

After it boils, reduce the heat to low and simmer for 25 minutes. Stir in the diced chicken and cook for 5 minutes. Add egg noodles and cook until fully heated.

Serve.

Sizzilin' Chicken Fajitas

Here's what you'll need to make this delicious Mexican dish:

4 Boneless, skinless chicken breasts
1 whole white onion (diced)
1 whole green pepper (diced)
1 whole red pepper (diced)
1 whole tomato (diced)
1/2 cup of vegetable oil
1 cup of salsa
2 tablespoons of fajita seasoning (or chili powder, cumin, and garlic)
10 flour tortillas
Shredded Mexican cheese
Shredded Lettuce
Sour cream

In a baking pan, bake the chicken breasts until fully done. Then, slice the chicken breast into strips. Each chicken breast should yield 7 or 8 strips.

In a saucepan, add 1/2 cup of vegetable oil and allow it to heat up. Next, add the onion, green pepper, red pepper, tomato, and 1 1/2 tablespoons of fajita seasoning. If you don't have fajita seasoning, you can use chili power, cumin, and garlic salt (1/2 tablespoon of each). Allow this to simmer over medium heat until the vegetables are soft (should take about 5-7 minutes).

Next, throw the strips of cooked chicken into the saucepan. Mix everything together for an additional 1 or 2 minutes over medium heat. Add 1 cup of salsa and allow to cook for additional minute.

Feel free to add more Fajita seasoning to suit your tastes.

Serve the mix on warm tortilla shells with sides of lettuce, sour cream, and shredded mexican cheese. Good side dishes to accompany this meal would be chips & salsa, refried beans, and guacamole.

Delicious Chicken Alfredo Recipe

Here's what you'll need to make this hearty Chicken Alfredo recipe:

2 Skinless, boneless raw chicken breasts
1 can Alfredo sauce
1/2 cup fresh garlic
1/2 cup butter
1/2 cup Italian dressing
2 cups grated parmesan cheese
1 box of noodles (your choice, but I prefer penne pasta noodles)
A bit of vegetable cooking oil
A pinch of garlic salt
A pinch of crushed red pepper
Salt and pepper

In a large cooking pan, coat the chicken breasts with a thin layer of vegetable cooking oil. Sprinkle with garlic salt, salt, and pepper. Pour some italian dressing over the top of the chicken. Bake at 350 degrees for 30 minutes or until the chicken is done (no pink).

While the chicken is cooking, boil some water in a large saucepan. Add the noodles. When the noodles are done cooking, use a strainer to drain the water.

In another saucepan, add 1/2 cup of butter and the 1/2 cup of fresh garlic. Sautee over medium heat for 3 minutes. Next, add the can of alfredo sauce and 2 cups parmesan cheese. Keep simmering over medium heat, stirring occasionaly, until the sauce is hot and everything is mixed together.

Cut up the chicken breasts and mix into the sauce. Salt and pepper to taste. Add a sprinkle of garlic powder. You can also add crushed red peppers if you want to add a little bit of spice.

Pour over the noodles. Serve with garlic bread.

(If you want, you can also add steamed vegetables to the sauce).
