Simple Meatloaf Recipe

Here's what you'll need to make this simple Meatloaf:

2 lb. meatloaf mix (beef)
1 cup tomatoes (canned)
1 cup seasoned bread crumbs
1 cup milk
2 eggs (beaten)
2 tsp. salt
1 tsp. sugar
1 tsp. baking powder
1/4 tsp. nutmeg
1/2 cup of finely chopped white onions (diced)
1/2 cup celery (diced)
1/2 cup green pepper (diced)

Preheat oven to 350 degrees.

In large bowl, mix all the ingredients together.

Shape the mixture into a meatloaf pan.

Cook for 90 minutes.

Serve hot.

Oregano and Garlic Meatballs

Here's what you'll need to make these mouth-watering meatballs:

3 pounds ground beef
5 tablespoons ground oregano
5 tablespoons parsley (crushed, dried)
1 clove garlic (chopped)
1 package dry onion soup mix (1 oz.)
2 cups Italian style dry bread crumbs

Preheat oven to 350 degrees. Coat a large pan with non-stick cooking spray.

In a large bowl, mix ground beef, oregano, parsley, and garlic. Add the onion soup mix and bread crumbs. Make sure everything is mixed together well.

Using a 1 oz. scoop, scoop and shape the meat mixture into balls. Place the balls onto the pan and cook for 1 hour (or until meat is fully cooked).

Beef or Chicken Quesadillas

Here's what you'll need to make these simple chicken/beef Quesadillas:

Chicken (cooked, diced) OR Ground Beef (cooked)
2 large flour tortillas
1 cup shredded mexican cheese
1 cup shredded lettuce
1/2 green pepper (diced)
1/2 red pepper (diced)
1/4 white onion (diced)
1/2 tablespoon Taco seasoning

In a saucepan, add cooking oil, onions, red pepper, and green pepper. Add taco seasoning. Add the chicken or beef. Sautee over medium heat for 5 minutes.

In another large saucepan, place one of the tortillas over low heat for 1 minute.

Sprinkle the cheese onto the torilla. Add the sauteed vegetables and meat (from the other pan) onto the tortilla.

When the cheese begins to melt, place the other tortilla on top. Flip and cook until the cheese is fully melted.

Cut into quarters. Serve with shredded lettuce, sour cream, and salsa.

Simple Carne Asada

Here's what you'll need to create this simple and quick Mexican dish:

1 lb steak (feel free to use as much steak as you want)
Flour tortillas
1 red pepper
1 green pepper
1 yellow pepper
1 white onion
1 tablespoon oil
1/4 teaspoon salt
1/4 teaspoon pepper
Additonal mexican seasoning (if desired)
Shredded lettuce
Sour Cream
Shredded, blended Mexican cheese

Slice the steak into small strips. Dice the peppers and onion.

In a saucepan, over high heat, add the cooking oil and cook the meat. Occasionaly sprinkle the meat with salt and pepper (to taste).

Add in the peppers and onions and cover for 5 minutes, stirring occasionally. Uncover and continue to cook until the meat is at the desired temp.

Add additional mexican spices if you desire. Serve inside tortillas with sides of shredded lettuce, sour cream, and mexican cheese.

Hot and Spicy Beef Curry

Ingredients:
1 1/2 lbs sirloin or tenderloin steak (cut into 1-inch cubes)
3 tablespoons olive oil
1 onion (cut into thin slices)
3 cloves garlic (minced)
1 tablespoon fresh ginger (minced)
2 1/2 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper
1/8 teaspoon turmeric
1/2 teaspoon salt
2 tablespoons water
3 tablespoons chopped cilantro

In a large frying pan, heat the oil over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes. Add the garlic and ginger. Cook for an additional minute, stirring.

In a small bowl, combine the coriander, cumin, crushed red-pepper, turmeric, salt, and water. Add the paste to the onion and cook, keep stirring, for 1 minute.

Add the meat to the pan and cook for 3 minutes. Raise the heat to high and cook for a few more minutes. Stir in the cilantro.

Serve hot.

Meat Sauce (red)

Here's what you'll need to make this delcious meat-based red sauce (goes great with spaghetti!):

5 pounds ground beef
6 medium onions (diced)
2 small carrots (diced)
1/4 cup olive oil
2 tablespoons minced parsley
1 can tomato puree (15 oz)
1 can tomato sauce (8 oz)
1 1/2 cups chicken stock/broth
Salt and pepper to taste

In an LARGE pot, add cooking oil and allow to heat up. Add diced onions and carrots. Add parsley. Stir. Cook for a few minutes until vegetables are soft. Set aside.

Cook the 5 lbs. of ground beef in the pot. Add tomato puree, tomato sauce, and chicken stock to the pot and stir.

Throw the vegetables back in the pot. Simmer for 30 minutes, uncovered.

Season to taste.

Can be frozen for later use or served fresh.
